Paleo Raspberry Tart
I’ve been trying to eat less sugar but every time I look for a packaged treat they are always loaded with unnecessary sugars. And by sugars I mean dates, Stevie, monk fruit etc. There’s just way too much of it in each bite. So I made my own treat with enough sweetness that satisfies my sugary craving. I’ve boiled it down to adding just 2 teaspoons of maple syrup to the raspberry filling and 2 teaspoons of coconut sugar to the top crumb layer. Its delicious, filling and best of all healthy! Perfect treat for anyone looking for a healthy dessert option.
Ingredients
Filling:
2 cups frozen or fresh raspberries
1 tablespoon lemon juice
2 teaspoons maple syrup
a pinch of lemon zest
1 tablespoon chia seeds
Crust:
2 cups almond flour or almond meal
2 tablespoons coconut oil
1 tablespoon vanilla extract
1 tablespoon water
¼ teaspoon sea salt
Crumb top layer:
1/2 cup walnuts
1/2 cup of pecans
1/2 cup unsweetened shredded or flaked coconut
2 teaspoons coconut sugar
1 tbsp coconut oil
a pinch of salt
- For the filling combine all ingredients except for the chia seeds and let simmer for a few minutes. Once the filling is bubbling mash them with a spoon. You’re creating a jam so after you have a nice consistency you can add the chia seeds and let cool in the refrigerator while you make the crust and crumb layer.
- For the crust add all ingredients and mix in a food processor until it’s evenly crumbly. You can also try to mix it with a wooden spoon if you don’t have a food processor. In an 8 x 8 baking dish evenly layer the crust and bake for 20 mins at 350 degrees.
- For the crumb top layer mix all ingredients in a food processor or you can use a pestle mortar for the walnuts and pecans and then mix everything together.
- After baking the crust and the filling has cooled you can add the filling layer to the top of the crust and then add the crumb top layer.
- Bake in the oven for 15 to 20 mins, until slightly golden.
- And now ENJOY!
I like to cut them into squares and freeze for when ever I need a quick power snack.
